Friday Favorites Week 2: A Healthy Valentine’s Dinner (or any other night).

They (unless you’re Dwight Schrute) say “the way to a man’s heart is through his stomach.” Well, if you’re looking for a healthy meal straight to his heart, I have one for you! (And those of you non-gluten free, who still want to add a starch, garlic bread would go great with this meal.)

But before I share this new favorite recipe, I just want to say a big “Happy Valentine’s Day!” to everyone who reads my blog! I still get way too excited when I hear from someone that they read and enjoy my blog. Like little-girl-on-Christmas-morning excited. So thanks for reading, and thanks for all your love and encouragement! I just love ya. 

Ok, enough mush…onto the good stuff! My sister-in-law, Annie, shared this next recipe with me, and I can definitely say it will be making it onto our official rotation of meals! It’s absolutely delicious and only has 5 main ingredients in it! It does take a little bit of time from preheat to eaten, but makes a good amount of food, with plenty of extra for leftovers.

5 Ingredient Pizza Spaghetti Pie

  • Preheat oven to 375.
  • Cut spaghetti squash in half (this can be difficult…I usually ask my strong man to cut it for me.)

  • Scoop out seeds…just like a cantaloupe or pumpkin. (Tip: I’ve also heard an ice cream scoop is a great utensil to use when doing this.)

  • (Of course I forgot to take a picture of this next step…) Put spaghetti squash in a 9×13″ dish cut side down. Then pour 1/2 cup of water into dish…just enough to cover the bottom. 
  • Bake until tender, about 30-35 minutes.
  • Rake a fork back and forth across the squash, removing it in strands. (This will happen naturally…it’s really weird to experience the first time!)

And that’s it for the spaghetti squash! Super easy…and Stuart and I actually like it more than regular spaghetti! (Healthier too!)

Now for the rest of the meal…you can do this next part while the spaghetti squash is cooking.

  • Lower temperature to 350 degrees.
  • Cook the sausage and onions until sausage isn’t pink anymore and broken up into pieces. (Tip: I use a potato masher to break up sausage or ground beef…works like a charm!) 
  • Add pizza sauce, dried basil, salt, pepper, and garlic (garlic is optional) and mix well. (You can also add other “pizza-like” ingredients…we added orange bell peppers because I had them on hand, but pepperoni, other veggies, cheese would also be tasty.)

  • Add spaghetti squash threads to a greased 9×13 pan, then add sausage mixture. 
  • Whisk eggs and add to baking dish. 
  • Mix everything together well. (Tip: I used my hands…which can be super gross, but I think does the best job at mixing everything together.)

  • Bake in oven for an hour, or until the top of the mixture forms a slight crust that doesn’t give when you press on it in the middle of the dish.
  • Let sit for 5 minutes, then enjoy! I promise it’s SOOOO good…so good in fact, that I forgot to take the final picture until a few meals later.

Ingredients
  1. 1 large spaghetti squash
  2. 1 pound italian sausage
  3. 1/2 yellow onion (I used red because we had it)
  4. 1 cup pizza sauce (sugar free if you're paleo)
  5. 1 teaspoon dried basil
  6. salt and pepper, to taste
  7. 3 eggs, whisked
  8. (optional: garlic, other pizza ingredients)
Instructions
  1. Preheat oven to 375 degrees.
  2. Cut spaghetti squash in half lengthwise. Place spaghetti squash cut side down on a baking sheet and add 1/2 cup water. Bake for 30-35 minutes or until the skin of the squash gives when you press on it. Then reduce oven heat to 350 degrees.
  3. Once squash is done cooking, remove threads and place in an 9×13 greased baking dish.
  4. Place a large pan over medium heat. Add italian sausage and onion. Cook until pink no longer remains in the sausage and it is broken up into pieces.
  5. Add pizza sauce, dried basil and salt and pepper to the pan and mix well. (Optional-add garlic and other pizza ingredients)
  6. Add sausage mixture to the 9x13 dish and mix well with spaghetti squash threads.
  7. Lastly, add whisked eggs to the baking dish and mix everything together until you can no longer see the eggs.
  8. Place in oven and bake for 1 hour or until the top of the mixture forms a slight crust that doesn’t give when you press on it in the middle of the dish.
  9. Let rest for 5 minutes before serving.

This next recipe is one of my ALL TIME favorite ways to get in my veggies:

Roasted Brussels Sprouts

  • If you do make this with the Spaghetti Pie, I suggest doing the prep work while the “pie” is cooking. It takes a little while.
  • Pre-heat oven to 400. 
  • Cut the bottom off brussels sprouts about 1/4-1/2″.

  • Peel off outer leaves. (Set them aside in a separate bowl…I’ll tell ya why later!)

  • Cut brussels sprouts in half top-to-bottom.

  • Place on a cookie sheet, cut side up.

  • Drizzle olive oil over brussels sprouts…I put my thumb over the top so it doesn’t come gushing out and drizzles out more evenly.

  • Then sprinkle salt, pepper and garlic powder over the whole thing.

  • Bake for about 30 minutes, then broil for a few minutes until they look crispy. But make sure to keep an eye on them while broiling so they don’t burn. (Also, a lot of ovens need to stay propped open during broiling.)

  3. Salt and pepper to taste
  4. Garlic powder to taste
Instructions
  1. Preheat oven to 400.
  2. Cut the end off brussels sprouts about 1/4-1/2".
  3. Peel off outer leaves (and put in a bowl for later...see recipe below!)
  4. Cut brussels sprouts in half top-to-bottom.
  5. Place on baking sheet cut-side up.
  6. Drizzle olive oil over brussels sprouts.
  7. Sprinkle salt, pepper and garlic powder over brussels sprouts.
  8. (Optional, drizzle a little bit more olive oil on top to let salt, pepper and garlic powder seep in better.)
  9. Bake for 30 minutes until outsides are beginning to brown.
  10. Broil, with oven door open, for a few minutes keeping an eye on them until they are crispy and outsides are browned.
  11. Eat up!

I love my brussels sprouts super crispy and remember telling my dad one night that I should figure out a recipe for “Brussels Sprouts Chips,” using the peeled-off leaves, creating simple, crispy goodness. Then I saw this recipe and tweaked it a bit to make exactly what I was looking for! (And it makes me feel not as wasteful, throwing out all those peeled-off leaves.)

Brussels Sprouts Chips

  • Preheat oven to 350.
  • Grab the bowl of outer leaves you set aside earlier.

  • Mix in fat of choice, (I used melted bacon fat, but you can also use olive oil, melted butter or ghee) salt, pepper, garlic powder and onion powder.
  • Divide leaves between 2 greased baking sheets in a single layer on each tray (or like me, do in 2 separate batches.)

  • Bake for 8-10 minutes, or until crispy and brown around the edges.

  • Chow down immediately.
